wedding cakes : I've baked a wedding cake, and boy was it anxiety making! Was I gonna haveenough cake? Was it gonna be good? Would I transport it to the site okay? It was for a wedding GIFT so it was doubly anxious making.here's what I did. Butter cake base, with chocolate frosting center (madewith Van Leer cocoa, that I got from "New York Cake and Baking Supplies"). Covered the cakes with Marzipan, then with rolled fondant. She has beautiful but notdifficult designs and some very practical info inthe front of the book for designing, baking,delivering, and serving wedding cakes. And, hersour cream chocolate cake recipe is soooo good!I have made several wedding cakes, and I have onesuggestion for doing a wedding cake for that manypeople. You might consider having a cake thatserves fewer people on display (which the brideand groom will cut) with sheet cakes already cutup in the kitchen. The sheet cakes would, ofcourse, be of the same flavor/filling/icing as thewedding cake.

These are the folks that make a multitude of cakedecorating and baking items. You should be able to locate these books anystore where cake decorating supplies are sold. The books are inexpensiveand can provide you with good advise on assembley techniques, reenforcinglayers to prevent collapse and methods of transportation. The advise theygive works and is basically what commercial cake bakers do. Pay attentionas a wedding cake is more than a lot of stacked layers.

They mostly do restaurantbusiness, but they used to do wedding cakes. Fabulous stuff!for a wedding cake, i might suggest Hoffman's Bakery over in Kirkland. not amass produced type like Borrecini(sp). cakes to die for(which, i suppose islike getting married).I loved my wedding cake. Both my husband and I *hate* the traditionalwhite cakes with crisco frosting. So we got a chocolate cake with a darkhard chocolate top. It was a huge success -- the biggest problem was thatwe ordered it as if we got a yukky white cake (which people tend to takea little slice of, and then eat a fourth of it, to be polite). I hadgreedy relatives that ate as many as three slices, and so there were somewho came who didn't get any.

There are many other people who do this as well (sothis is not just a plug for her).There are some advantages -- usually you get the cake ascustomized as you like, and it not only looks good buttastes good too. If you want more interesting flavors, youcan usually get them.

For some people it iseasier to trust an established business.Prices will typically all be about the same. In fact, ifsomebody drastically underbids everyone else I would worrythat they don't really know what is involved!I had exactly this experience with my wedding cake. I had someone who did itas a "side business" do it -- she was on a list of people recommended by thewedding coordinator at the church we rented for the wedding. She was veryprofessional. She had a huge photo album with probably hundreds of otherwedding cakes she'd done. She informed me of options available to me andadvantages and disadvantages of them. One thing that absolutely thrilled mewas that she was able to decorate the cake in the exact colors of my weddingcolors because I gave her scraps of the fabric used for the attendants'dresses. (Yes, I know this is obsessive, but it turned out fantastic!)I did find that her pricing was about the same as I was told by many bakeries Ivisited, but the main difference was that her "serving sizes" were moreaccurately what I suspected people expect from a wedding cake. I've been toweddings where they sliced the cake very thin and it just seemed stingy to me. The cake I got from the woman who did my wedding was supposed to serve 200. AsI recall there were 3 round tiers and 4 smaller heart-shaped cakes and eventhough we had around 180 guests, there was probably at least 1/3 of the cakeleft over. Also the top tier "anniversary" cake was substantially large (canbe a problem taking up all that room in the freezer for a year!). The upsidewas that on my 1st anniversary while I was in the hospital recovering from ac-section, my husband didn't starve because he had plenty of anniversary caketo eat!
